If you haven’t yet subscribed to Glowing Older, ® here’s a delicious anti-cancer recipe you’re likely missing:
Raw Kale Salad with Blueberries, Apple and Walnuts (adapted from www.supersaladsandmore.com, where you’ll find lots of other salad suggestions)
Ingredients:
Two large bunches of Lacinata kale, torn or cut into small pieces
One cup of blueberries
3/4 cup scallions, diced
1 green apple, diced
1/3 cup walnut pieces
Dressing: Note that if you’re battling cancer, you could substitute a lemon juice or avocado-based dressing. Balsamic vinegar contains fructose, which could wreak havoc with your blood sugar (although scientists are not yet sure about that. It seems that some of us may be more sensitive than others.)
1/3 cup olive oil
¼ cup balsamic vinegar
Pinch of salt and pepper
Combine everything, and let sit in fridge a few hours to wilt.
For maximum anti-cancer benefits, minimize fructose: Keep the dressing light, avoid sweeteners, and go easy on the fruit. The science on fructose is not yet settled.
